The Black Forest supplies excellent butter, and its many
mountain streams furnish beautiful trout. Fwh of all kinds
is imported from Holland and the North of France. Tinned
or preserved provisions are to be had in the good shops.

Wine, especially the famous local Markgriifler, costs
about 5 d. a litre and upwards, by the cask: and Bcei; about
2l/i d. the litre bottle. (A litre is-88 of a quart, or about

People's kitchen.

There is a very comfortable, well arranged establishment
under this title at 4 Weber Strasse. As it is well patronised,
the food is very cheap: viz: Breakfast, 10 pf., Dinner, 25 pf.:
Supper 20 pf.

Domestic Servants.

Wages are, for Cooks, from 45 to 00 Mark a quarter:
for Housemaids, from 30 to 40 Mark.

A good Registry Office is the "Allgemeine Arbeits-
nachweis-Anstalt", Schuster Strasse 21, which is helped by
the Town and its various philanthropical Associations. Servants
change places mostly on the quarter days: Is* .Ian:
1st April: t«* July: and 1st October. A month's notice is
required, on both sides.

All Servants are liable for the Tnsurance-tax on account
of sickness (Krankenversicherung), and therefore the employer
is bound to report, within three days, the entry upon,
or departure from a situation. This report is made upon
a form, and must bo handed in at the office, 51 Kaiser-
strasse. By law the employer pays half, and the servant
half of this tax: as a matter of common practice the employer
pays all.
